- Cherry Tree Beef is like no other organic, or ordinary beef. It's high grade Black Angus beef raised on high rainfall pastures of biodynamic (self sustaining) organic grass and clover for more than 30 years, its packed full of flavour and nutrients.
- When cooking, its will hold its moisture moreso than other beef, so for slow roasting a brisket we suggest at least three hours cooking time - low and slow - the longer the cooking the more spectacular the result.
- Brisket is essentially the pectoral muscles from the chest/brisket area between the front legs of the animal. It is has a high degree of connective tissue and is best suited to slow wet cooking such as braising and casseroling.
