Wild Australian Southern Rock Lobster (Crayfish) - (Jasus edwardsii) - Whole Green Tails - immediately snap frozen at source on the fishing boat.

These are Grade A - the finest quality Crayfish available. Normally only the highest quality restaurants.

Considered one of the worlds most indulgent eating experiences.  Boasting sweet, delicate firm white flesh; a rich 'sea spray' flavour and a generous meat-to-shell ratio – almost double that of other lobster species.

Fishermen out of Port Lincoln Australian are now able to provide us with a few of these throughout the season. Normally destined for the world's finest eating establishments.

Mainly native to the oceans along the southern part of Australia they are recognised as Australian Rock Crayfish or Lobster.

Certified as Sustainably fished from the Spencer Gulf. The Fresh Fish Place fishermen catch it in the seas out from Port Lincoln, Australia.

Approaches to cooking:  poach, deep-fry, pan-fry, stir-fry, bake, grill, barbecue, raw (sashimi) cooking. The firm flesh holds together well during most cooking methods.

Undercook, rather than overcook, them, as they will continue cooking in the residual heat; overcooked Rock Lobster will become tough and leathery.  Serve in the shell for that Wow factor.

Cooks well with any or a collection of butter, cayenne, coconut, cream, dill, French tarragon, garlic, lemon, lime, mustard, Pernod, white wine.
