Southern Australia Bluefin Tuna is the most world's most premium & valuable tuna.
BlueFin Tuna has a very high oil content which gives it its distinctive and superior creamy texture and moistness compared to other tunas. Sometimes this can cause the tuna to go grey. It does not affect the premium taste. Other type's of tuna retain their pinkness because they have a lower oil content, but also sometimes they are treated.
The individual Fillets are snap frozen by the Fishermen in Port Lincoln, and sent directly to us by direct flight.
Southern Bluefin Tuna (Thunnus maccoyii) is one of the worlds most prized eating fish. Southern Bluefin Tuna is super soft, and has a very high natural omega's fat content, dark red flesh, and mild tasting, which combined makes it one of the most desirable fish on the planet.
Our Bluefin Tuna is caught wild and held in deep sea pens "ranched" until ready for catching and shipping directly to us. The spectacular fish consume natural fish in the pens which include its main food source, wild sardines. We are very proud to be working with The Fresh Fish Place and their fishermen to source this amazing fish while sustainability quota's presently allow.

The Australian Government issued strict laws in 1995 to ensure the preservation of the Southern Blue Fin tuna. Each year a global consortium of fishing countries , the International Commision for the Conservation of Southern Bluefin Tuna will determine Sustainable Catch Quota for each fishing country. The quota for each country is then allocated to certified and approved fishermen. Each fish caught is logged and required to be reported to the Australian Government, and actual video surveillance occurs on each registered fishing boat to ensure strict fish quotes are adhered to. Each approved fishing boat is constantly tracked by the Australian Government to ensure compliance with quota and fishing restrictions. Currently the international stock of Bluefin Tuna is showing positive signs of increasing. In Australia the Bluefin tuna is classified as 'conservation dependant' and has an international recovery plan in place. This means the Southern Bluefin tuna can still be fished by Australian Licenced fishermen in Australian waters, including around Port Lincoln, but the amount that can be caught is restricted to specific quota's.
